Breakfast pizza

A delicious brunch option that’s quick, easy and packed with protein

This is one of my all-time favourite brunch meals, any day of the week. It always feels a bit wrong having a pizza for breakfast, the sort of thing I used to do as a student. But when it’s only 406 calories with 37 grams of protein we can technically call it a healthy option, can’t we? It’s nice and quick to put together, and the cooking is easy as it simply goes in the oven. I know it’s a brunch dish the whole family will enjoy. Spice it to your taste with chilli flakes – I love chipotle chilli flakes for this.

Method:

  • Preheat the oven to 220°C/200°C fan/gas 7.
  • Spray an ovenproof pan with a little oil and add the wrap.
  • Crack the eggs onto the wrap and spoon in the egg whites to coat the remaining parts of the wrap.
  • Add the tomatoes and spinach, ensuring you don’t break the egg yolks.
  • Sprinkle with salt and pepper, paprika, chilli flakes and cheese then bake for 8–10 minutes until the eggs are just set. Serve immediately.

Ingredients

10–12 sprays light cooking oil
1 low calorie wrap
2 eggs
100ml egg whites (enough to cover the wrap)
3 small tomatoes, chopped handful of shredded spinach
1 tsp paprika
1 tsp chilli flakes
20g light Cheddar, grated
Salt and pepper
