250g icing sugar, plus about 150g icing sugar to coat
Zest of 1⁄2 lemon
1 heaped tbsp orange blossom honey
90g egg white (about 3 eggs’ worth)
70g dried apricots, diced in small cubes
2 tsp orange blossom water
