2 medium red onions, sliced
½ head of garlic, cloves separated, unpeeled
2 medium apples, cored and cut into chunky slices (8 -12 per apple)
125g dried apricots
50g dried apples (optional)
50g pitted green or black olives, drained
30g capers, drained and rinsed
1 tbsp dried thyme
2 fresh bay leaves
salt and pepper
75ml apple cider vinegar
125g honey
60ml olive oil
125ml white grape juice
Sprinkling of chopped parsley for garnish (optional)
